I would like to feature a healthy creation with you each week…and give kid friendly modifications too.
In our family as we have made the switch to mostly unprocessed, fresh, and paleo/primal…ok let’s just say we try to eat clean 90% of the time…and even when it’s not “clean” we try to make the best choices.
Why? Because we feel better. Because Nutrition is a 80% of the fitness journey. Even though my kids might not always be pressing play to Max30 with me…they are little athletes too…their daily workouts are play based, and school…and I want them to be strong body & soul.
One thing I missed most from Paleo eating is rice. Since discovering cauliflower “rice” though my world has changed.
Today’s feature is stuffed peppers which traditionally contains rice…but last night we substituted Cauli-rice. It was amazing!!!
Step one: Brown one lb of Ground turkey or beef with 1/2 onion and two celery stalks.
Step four: core 4 peppers and preheat oven to 350.
** what about the leftover cauliflower? It’s all about having prepped good food choices…in a smaller pot add 2 tbs olive oil. Add remaining cauliflower. Season and add 1/3 cup of liquid. Cover and cook 15 minutes…store to use as an add in for a different meal.
Voila!!! Dinner is served.
**if your kids are like mine…and not yet ready to embrace this new found love for Cauli-rice, simply add cooked quinoa or brown rice to the meat.
***get sneaky…add a little to the rice or quinoa mixture…and watch them enjoy 🙂
